Ingredients

1 cup Anthony’s Organic Split Red Lentils, soaked

2 tbsp olive oil

1 yellow onion, diced

2 garlic cloves, minced

1 red bell pepper, diced

2 tsp salt

1 tsp Anthony’s Organic Dried Thyme Leaves

1 tsp dried oregano
-
1/2 tsp smoked paprika
-
Freshly ground black pepper to taste

5 oz tomato paste
-
3 cups vegetable broth
-
1 (15-ounce) can of crushed tomatoes

¼ cup walnuts, finely chopped

1 lb pasta of choice

Instructions:
- Soak the red lentils in hot water for a half hour to an hour.
- Chop your other ingredients and set them aside.
- Heat a large pot and add the olive oil.
- Add the onions and cook until translucent, then add the minced garlic, chopped bell pepper, salt, thyme, oregano, smoked paprika and black pepper. Cook for another 10 minutes.
- Add the tomato paste and continue cooking. Stir occasionally and cook until the tomato paste darkens.
- Pour in the vegetable broth, drained red lentils, crushed walnuts and crushed tomatoes.Simmer for 20 minutes.
- While the sauce cooks, cook your pasta according to package instructions.
- When the sauce is ready, add the drained pasta to the sauce pot and stir to combine. Enjoy!
