Ingredients
Ingredients for the salad: • 10 oz bag chopped kale • 2 cups shelled edamame • 2 avocados, chopped • ¾ cup Anthony’s Goods Walnuts • ¼ cup Anthony’s Goods Sunflower Seeds Ingredients for the dressing: • ½ cup peanut butter • 2 tbsp low sodium soy sauce • 1 tbsp rice vinegar • 2 tbsp lime juice • 2 tbsp honey or maple syrup • 2 tsp sriracha • 1 clove garlic, minced • 2 tbsp ginger paste • Salt, to taste
Instructions
Another healthy salad for your collection, this crunchy kale mix is filled with protein from edamame and healthy fats from avocados, walnuts and sunflower seeds. Toss it together in minutes for a delicious meal. 1. In a small bowl, whisk all of the dressing ingredients together and set aside. 2. In a large bowl, mix all of the salad ingredients. Add as much dressing as you’d like and toss to coat.
