French Toast Waffles

Ingredients

Bread:

3 eggs
1/4 cup Anthony's Coconut Oil
1/4 cup half and half
3 tablespoons Anthony's Collagen Peptide Powder
1/3 cup Anthony's Oat Fiber
1-1/2 cups Anthony's Blanched Almond Flour
1 teaspoon baking soda
1/4 cup Anthony's Cane Sugar
1 tablespoon vanilla extract

French Toast Batter:

1/2 cup half and half
1 teaspoon vanilla extract
1/4 cup Anthony's Cane Sugar
2 eggs

Topping:

Whipped cream

Instructions

Bread:

In a mixing bowl, combine eggs, coconut oil, and half and half; mix well.
Add remaining bread ingredients and mix well.
Transfer to a greased glass loaf pan (microwave safe).
Microwave on high (100 percent power) for 4-5 minutes
Let cool a bit, remove from pan, and cut into slices.

French Toast Batter:

Mix together all french toast batter ingredients and pour into a 9"x11" glass baking dish.
Soak bread slices 2-3 minutes per side in mixture.
Cook bread slices in a greased waffle iron until golden brown.
Serve with whipped cream.
