Ingredients

½ cup Anthony’s Organic Oat Fiber

½ tsp Anthony’s Xanthan Gum

2 tbsp Anthony’s Erythritol (or sweetener of choice)

¾ tsp baking powder

3 eggs

⅓ cup Greek yogurt

2–3 tbsp heavy cream

1 tbsp vanilla extract

¼ cup chocolate chips
Instructions
1. Preheat oven to 350°F and line a muffin pan.
2. In a bowl, whisk together all of the dry ingredients except chocolate chips.
3. Add the wet ingredients and stir until smooth.
4. Fold in the chocolate chips.
5. Spoon the batter into muffin cups and bake 20–25 minutes, or until a toothpick comes out clean.
6. Cool and enjoy!
