Instructions
This healthy salad makes an excellent light meal or side dish. Crunchy celery and cucumber, juicy tomatoes and a zesty lemon-garlic dressing add texture and flavor to this colorful dish.1. Cook the black eyed peas according to package instructions and set aside to cool.
2. Add the salad ingredients to a large bowl.
3. In a small bowl, whisk together the ingredients for the dressing.
4. Toss the salad with the dressing and serve!
