Apple Cinnamon Bread
1 large loaf
Bread: 4 eggs 1/3 cup Anthony's Coconut Oil, melted 1/4 cup Anthony's Coconut Sugar 1/4 cup almond milk 1 teaspoon apple cider vinegar 1-1/2 cups Anthony's Blanched Almond Flour 1/2 cup Anthony's Cassava Flour 1/4 cup Anthony's Oat Fiber 2 teaspoons Anthony's Ceylon Cinnamon 1 teaspoon Anthony's Xanthan Gum 1 teaspoon baking soda 1 large apple, peeled and chopped Topping: 3/4 cup Anthony's Blanched Almond Flour 3 tablespoons butter 2 tablespoons Anthony's Coconut Sugar 1 teaspoon cinnamon
Bread: Preheat oven to 350° Fahrenheit and grease a standard-sized loaf pan. In a mixing bowl, combine eggs, coconut oil, coconut sugar, almond milk, and apple cider vinegar and mix well. Add almond flour, cassava flour, cinnamon, xanthan gum, and baking soda; mix well. Fold in apple. Transfer to prepared loaf pan. Topping: In a small mixing bowl, cut butter into almond flour. Add coconut sugar and cinnamon and mix well. Evenly spread atop the bread batter in loaf pan. Bake for 45-50 minutes. Cool, cut, and enjoy.
