Ingredients

Ingredients for the jam:
	•	2 cups Anthony’s Goods Dried Apricots 
	•	2 cups hot water
	•	1 tsp vanilla extract 
	•	4 tsp Anthony’s Goods Fruit Pectin Powder
	•	2 cups Anthony’s Goods Cane Sugar
	•	2 tbsp lemon juice 

Ingredients for the toast:
	•	Toast
	•	Runny tahini
	•	Roasted sunflower seeds, for topping 

Instructions

Here’s a bright idea for breakfast: tahini and sunny dried apricot jam swirled on toast and topped with crunchy roasted sunflower seeds for the perfect crunch. 

1. Soak the dried apricots in the hot water for at least 30 minutes. 

2. Add the apricots and the remaining water to a blender with the vanilla extract and blend until mostly smooth.

3. Add this mixture to a pot and bring it to a simmer. Sprinkle in the pectin powder and stir to combine.

4. Add the lemon juice and sugar. Mix well and stir occasionally until thickened. Remove from the heat and let cool. The jam will thicken more as it cools.

5. Toast your bread, slather on some tahini and add tiny dollops of the jam. Now swirl!

6. Top with the toasted sunflower seeds and enjoy.
