Ingredients

  • Ingredients for the waffles:

  • 2 cups Anthony’s Goods Rolled Oats

  • 1 ½ cup Anthony’s Goods Oat Flour

  • 3 tsp baking powder

  • 1 tsp Anthony’s Goods Cassia Cinnamon Powder

  • ½ tsp salt

  • ½ cup mixed berries (fresh or frozen)

  • 2 cups almond milk

  • 2 eggs

  • 2 ripe bananas, mashed

  • ¼ cup avocado oil

  • ¼ cup honey or maple syrup

  • 2 tsp vanilla extract

  • Anthony’s Goods Shredded Coconut, for topping

  • Ingredients for the lavender syrup:

  • 2 cups Anthony’s Organic Cane Sugar

  • 1 cup water

  • 3 tbsp Anthony’s French Lavender Petals

Instructions

These gluten free waffles are bursting with berries.This recipe makes a big batch that goes perfectly with a drizzle of lavender syrup.

1. Make the lavender syrup: In a small saucepan, bring the water and lavender to a boil. Reduce the heat and add the sugar. Stir until fully dissolved. Let the mixture simmer for 15 minutes, then remove it from the heat and let it steep. The longer you steep, the more lavender flavor the syrup will have. We recommend steeping for at least 3 hours. Strain out the lavender petals and store in an airtight container in the fridge.

2. Make the waffles: Add all of the ingredients, except the berries, to a blender and blend until mostly smooth. Fold the berries into the batter and let the mixture rest for 15 minutes. Meanwhile, heat up your waffle iron. Pour the batter ⅓ cup at a time into the waffle iron and cook until fluffy ad golden-brown.

3. Serve topped with shredded coconut and drizzled with lavender syrup.
