Colorful Homemade Boba (Tapioca Pearls)

Ingredients:

  • ½ cup Anthony’s Goods Organic Tapioca Flour
  • ¼ cup boiling water
  • ¼ tsp activated charcoal (if making black)
  • ¼ tsp matcha tea powder (if making green)
  • ¼ tsp Anthony’s Goods Beet Juice Powder (if making pink)
  • ¼ cup maple syrup or honey

Directions to make the boba:

  1. Fill a medium bowl with the flour and your colorant of your choice. Boil the water and, little by little, pour it onto the flour and mix quickly with your fingers. This is a tricky step, as you need to work fast but be careful not to burn your fingers. Stop kneading when you reach a play-dough like consistency. (This might take less than ¼ cup of water. Be careful not to use too much water or to let the water cool, as this can result in a slimy mess.)
  2. Roll the dough into a snake and cut it into small pieces. Roll each piece into a ball. If the dough feels dry and begins to crumble, use a few drops of water to wet your palms and to bring it back together into the desired shape.
  3. In a pot, bring 1 cup of water to boil. Drop in the boba dough balls and let them cook for 15 minutes. Drain and place in a container filled with ¼ cup honey or maple syrup to slightly sweeten them. Give them a little stir to ensure they are all well-coated.
  4. Let the boba soak for 30 minutes on the counter before adding to your beverage of choice. Do not store leftovers in the fridge as the boba will harden.
