250g Chinese egg noodles

3 tbsp olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 white onion, sliced

1 head of broccoli, chopped

1 cup edamame

1 cup Anthony’s Organic Whole Cashews

1 pack mushrooms, sliced (8 oz)

2 tsp curry powder

2 tsp Anthony’s Organic Cumin Seed Powder

2 tsp paprika

1 cup vegetable broth

2 tbsp soy sauce
-
2 tbsp maple syrup

1 cup Anthony’s Organic Coconut Milk Powder, dissolved in 2 cups warm water

Anthony’s Organic Hulled Sesame Seeds (toasted), for serving

Instructions:
- Heat the olive oil in a hot pan and sauté the vegetables over medium heat.
- Add the spices, coconut milk, vegetable broth, soy sauce, and maple syrup. Let everything simmer until the vegetables are tender.
- Cook the noodles according to package instructions. Add them to the pan with the vegetables.
- Simmer for a few more minutes, then take off the heat.
- Sprinkle with sesame seeds before serving.
