Coconut Cashew Noodles

This 30-minute recipe is perfect for a healthy weeknight meal.

Ingredients

  • 
250g Chinese egg noodles 


  • 3 tbsp olive oil


  • 1 red bell pepper, sliced


  • 1 yellow bell pepper, sliced 


  • 1 white onion, sliced


  • 1 head of broccoli, chopped


  • 1 cup edamame


  • 1 cup Anthony’s Organic Whole Cashews 


  • 1 pack mushrooms, sliced (8 oz)


  • 2 tsp curry powder 


  • 2 tsp Anthony’s Organic Cumin Seed Powder


  • 2 tsp paprika


  • 1 cup vegetable broth 


  • 2 tbsp soy sauce 


  • 2 tbsp maple syrup


  • 1 cup Anthony’s Organic Coconut Milk Powder, dissolved in 2 cups warm water


  • Anthony’s Organic Hulled Sesame Seeds (toasted), for serving

Instructions:

  1. Heat the olive oil in a hot pan and sauté the vegetables over medium heat.


  2. Add the spices, coconut milk, vegetable broth, soy sauce, and maple syrup. Let everything simmer until the vegetables are tender. 


  3. Cook the noodles according to package instructions. Add them to the pan with the vegetables.


  4. Simmer for a few more minutes, then take off the heat. 

  5. Sprinkle with sesame seeds before serving.
