Ingredients
• 3 small clementines, peeled and segmented • ½ cup Anthony’s Goods Coconut Milk Powder • 1 cup water • ½ cup Anthony’s Goods Rolled Oats • 1 tbsp Anthony’s Goods Black Chia Seeds • 1 tbsp Anthony’s Goods Shredded Coconut • Honey, to taste • Toppings: Anthony’s Goods Sunflower Seeds and Shredded Coconut, kiwi berries, golden berries, clementines
Instructions
This ain’t your granny’s oatmeal. With a coconut milk base, juicy chunks of sweet clementine and chia seeds for a superfood boost, this breakfast bowl is a bright and citrusy way to kick off the day. 1. Peel your clementines and place them in a small bowl. Using a fork, mash and muddle them a little to release the juices. 2. Add the mashed clementines to a small saucepan. Add in the water and coconut milk powder and bring to a boil. Stir while the mixture heats up until the powder has dissolved. Reduce to a simmer and add the rolled oats, shredded coconut and chia seeds. Stir and cook until the mixture thickens and the oats are soft and chewy. 3. Add honey, taste, and adjust to your liking. 4. Pour into a bowl, add toppings and serve!
