Charred Broccolini with Spicy Cashew Sauce

Ingredients

Ingredients for the broccolini:
	•	16 oz broccolini
	•	2 cloves garlic, minced
	•	1 tbsp olive oil
	•	Squeeze of lemon 
	•	Salt, to taste
	•	Freshly ground Anthony’s Goods Tellicherry Peppercorns, to taste

Ingredients for the spicy cashew sauce:
	•	1 ¼ cup Anthony’s Goods Roasted Cashews
	•	½ cup olive oil
	•	⅓ cup rice vinegar
	•	1 tsp pepper flakes
	•	1 tsp soy sauce
	•	1 tbsp ginger paste
	•	1 tbsp honey
	•	1 tsp salt
	•	1 clove garlic 

Instructions

Need a vegetarian side for dinner? Serve charred broccolini alongside a spicy cashew dipping sauce for a winning combo. 

1. In a large pan, sauté the garlic in the olive oil for a minute, then add the broccolini. Cook on medium-low heat until the broccolini is fork-tender, then raise the heat to char them. 

2. Season with salt, pepper and a squeeze of lemon. Remove from the heat.

3. In the bowl of a food processor, add all of the sauce ingredients and process until mostly smooth. (Leave some cashew chunks for texture.)

4. Serve the broccolini alongside the spicy cashew sauce for a perfect combo.
