Low Carb Chocolate Cookies
⅓ cup Anthony’s Coconut Oil ½ cup Anthony’s Erythritol 2 eggs ¼ cup Anthony’s Coconut Flour ¼ cup Anthony’s Cocoa Powder ¼ teaspoon Anthony’s Xanthan Gum ¼ teaspoon salt
Preheat oven to 350° Fahrenheit and grease a baking sheet. In a mixing bowl, cream together the coconut oil and erythritol. Add the eggs and mix well. In a separate bowl, combine the coconut flour, cocoa powder, xanthan gum, and salt; mix well. Mix the dry ingredients into the wet ingredients. Form tablespoonfuls of dough into balls and flatten out a bit on the prepared baking sheet. Bake for 15 minutes. Cool and enjoy.
