Coconut Bars

Ingredients

Crust

1 cup Anthony’s Goods Walnuts
1 cup oats
½ cup Anthony’s Goods Coconut Sugar
¼ cup Anthony’s Goods Coconut Oil
¼ cup Coconut Cream

Filling

3 eggs
1 cup coconut milk
1 cup Anthony’s Goods Coconut Sugar
1 tsp vanilla
¼ tsp salt
4 cups Anthony’s Goods Toasted Coconut Cane Sugar
½ cup Anthony’s Goods Almond Flour
¼ cup Anthony’s Goods Arrowroot Flour

Instructions

Preheat oven to 350 degrees.
Add the walnuts, oats, coconut sugar, coconut oil, & coconut cream to a food processor and process until a dough forms.
Press the dough down into a 9x13 in pan in an even layer.
Place the pan into the oven and bake for 12 minutes.
Meanwhile, in a food processor add the eggs, coconut milk, vanilla, salt, coconut, almond flour, & arrowroot flour.
Process the filling together until combined & mixed completely (there will be chunks from the coconut).
After the crust is done baking, remove it from the oven.
Add the filing to the top of the crust in an even layer.
Return the pan to the oven and bake for 25-30 minutes.
Once the coconut bars are done baking, remove the pan from the oven & allow the bars to cool.
Store the leftovers in an airtight container.
