Chocolate Chip Muffins

Ingredients

Muffins:

4 eggs
1/3 cup Anthony's Coconut Oil, melted
1/3 cup Anthony's Coconut Sugar
1/3 cup almond milk
1/2 cup Anthony's Brown Rice Flour
1/2 cup Anthony's Coconut Flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup chocolate chips

Frosting:

1/3 cup chocolate chips
1/3 cup Anthony's Coconut Oil
1/4 cup coconut cream

Instructions

Muffins:

1. Preheat oven to 350° Fahrenheit and grease a muffin pan.
2. In a mixing bowl, combine the eggs, coconut oil, coconut sugar, and almond milk; mix well.
3. Add the brown rice flour, coconut flour, baking soda, and salt; mix well.
4. Fold in chocolate chips.
5. Divide between 8 prepared muffin cups.
6. Bake for 25 minutes.
7. Cool.

Frosting:

1. Melt the chocolate chips in the microwave and transfer to a mixing bowl.
2. Add the coconut oil and coconut cream and mix well.
3. Cool and frost muffins.
